Hello, everyone, and welcome to MARCH! Can you believe it? As I live and breathe it’s 80º here in Kentucky and I’m speechless. Let’s jump into it!
The funny thing about social media is that when something goes viral, it’s usually not the first time that thing has experienced its 5 seconds of fame. One of the recipes making its way around the interwebs this week is Million Dollar Spaghetti. Now, if you’ve been on Pinterest or a fan of blogs for any length of time, this is probably not a new concept to you. Basically, it’s cooked spaghetti layered with a cream cheese-based sauce and then meat sauce and cheese on top. I can’t find the original post that made it go viral because there are just so many from the last few months, but how I saw that it was back was via mattjames9191 of Bachelor fame (whose videos I love, btw), who posted 5 days ago.

In Matt’s video, there was a hot debate going on in the comments. Are you team break your spaghetti or leave it whole? I’m team leave it whole all the way.
Next on the docket is whipped brie. Now again, this is nothing new, but boy is it having its moment. To my knowledge, Thomas Keller actually created this concept and serves it at French Laundry. Lucky for us, it’s super easy to make at home without a months-long waitlist. One of my favorite food creators, foodmymuse has several amazing recipes for different whipped brie variations. I can’t wait to try her Whipped Brie Brûlée with Spiced Crostini! Definitely go give her a follow TT and Instagram.
It wouldn’t be a week on social media without something involving a Fruit Roll-Up going viral. I swear Tik Tok is solely responsible for keeping them in business. This time, it’s 93-year-old golisdream sharing her favorite late-night snack. First of all, go look at her page and join me in disbelief that this woman is 93!! Anyway, her snack is a scoop of mango ice cream folded up inside a Fruit Roll Up. As the candy touches the ice cream, it freezes and has a very satisfying crunch. I can’t wait to try this one with my little girl, I have a feeling she’s going to love it.
Maybe it’s because I’m slightly on the side of fitness Tik Tok, but I cannot get away from protein puddings on my FYP. You could probably go outside of your house, throw a rock, and hit someone who’s done a video on it. Most of the videos say it’s a bottle of protein shake blended with 2 tbsp of sugar-free pudding mix. You then let it sit until thick and enjoy. I always have protein shakes but picked up sugar-free chocolate pudding just for the occasion. Guys, it wasn’t the vibe for me. Maybe I need to try it again, but I’d rather just drink the protein shake and then maybe make some pudding or have another treat. I don’t get it.
A pudding I DO love that is always coming back up on social is chia seed pudding. I’ve recently started making it by blending my unsweetened almond milk with a date before mixing it with my chia seeds. I love the rich sweetness that the date adds through the whole thing. I top it with berries and pumpkin seeds for a light but satisfying pre-workout breakfast. I use 2 tbsp of chia seeds to 1/2 cup of almond milk and a splash of maple syrup or one pitted date blended up with the milk.
